How to make nasi kerabu (instruction 1)
Instructions
Rice
- Wash and drain the rice. Soak the rice with the butterfly pea flower water for 10 minutes (if using). Add in kaffir lime leaves and lemongrass and cook the rice as usual. If you are just using blue coloring, drop a few drops of the color and cook as usual.
Coconut Flaked Fish (Kerisik Sambal Ikan)
- Dry fry the grated coconut in wok/pan until lightly brown.
- Pound shallot & ginger in pestle and mortar. Add in coconut and other ingredients, pound to mix well. If you do not have pestle and mortar, use a grinder/blender.
Coconut Sauce (Sambal Tumis Kelapa)
- Combine dried chilies and shallots by grinding or blending in a blender. Into a pot, put coconut milk, ground chilies and shallots, dried sour fruit slices and lemongrass. Bring to a slow boil.
- Simmer gently, stirring constantly for 10 minutes or until oil separates. However, if you are using canned coconut, the oil will not separate no matter how long you cook. In this instance, just cook until the gravy thickens.

How to make nasi kerabu (ingredients part 1)
Some people might think that making nasi kerabu is difficult, it is not. I will share how to make nasi kerabu where at first i will share the ingredients.
Ingredients
Nasi
- Cooked Blue/yellow/plain rice
Coconut Flaked Fish
Coconut Sauce (Sambal Tumis Kelapa)1 Mackerel - grilled and remove the flesh- 80g Grated Coconut
- ½ teaspoon Salt
- 1 teaspoon Sugar
- 4 Shallots
- 1cm Ginger - peeled
- ¼ tsp ground White pepper
- 3 Dried Chillies - soaked with hot water to soften
- 4 Shallots - peeled
- 300ml Coconut Milk
- 1 piece Dried Sour Fruit (Asam Gelugur / Asam Keping)
- 1 stalk Lemongrass - lightly bruised
- ½ teaspoon sugar
- ½ teaspoon salt - optional
- 1 teapoon Budu
Choice of Herb Salad (Ulam) - finely sliced
- Cabbage Leaves
- Bean Sprouts
- Long Beans
- Four Angled Bean
- Vietnamese Mint
- Kaffir Lime Leaves
- Lemongrass
- Bunga Kantan
- Onion

Nasi kerabu putih (tumis)

Nasi kerabu tumis doesn't have color, it is white or plain rice. Nasi kerabu putih (white) which comes with its own sambal tumis (a special coconut milk based gravy with local herbs and spices, with a hint of chillies). Making nasi kerabu putih is easier than nasi kerabu kuning and nasi kerabu biru because it is simple and does not require a lot of ingredients. Normally, nasi kerabu putih can be found at restaurants instead of at night maarket because at night market normally people sell nasi kerabu biru as it is a common nasi kerabu in Malaysia.

How can it be yellow?
As in my previous entry, i state the information about nasi kerabu biru where the blue color is because of the Kembang Telang flower. So i will provide a little bit information about how nasi kerabu kuning got it color. :)
For the rice preparation, tumeric is used to make nasi kerabu kuning in order to turn the color of the rice from white to yellow. Nasi kerabu kuning does not require a sambal tumis, instead it has a watery chilly sauce which makes it slightly hotter. The “kerabu” (salad) could be any vegetables or edible leaves though the more or less standard version will have daun kesum, taugeh (bean sprout), thinly cut; long green beans, bunga kantan, cucumber (connoisseurs will insist “seeded”), and daun kadok. Apart from that it is also served with fried breaded fish, keropok keping, salted egg, "solok lada" (fish fillet and coconut-stuffed chillis), and pickled garlic (local gherkins).

Not only blue, there are also yellow and white
I guess everyone wonder how many types of nasi kerabu there are. Am I right?
Actually there's more than one type of nasi kerabu in Malaysia which are nasi kerabu biru, nasi kerabu kuning and nasi kerabu tumis. What is the difference between all those three types of nasi kerabu? Those three types of nasi kerabu have the same taste except for the colour is different. Why the color of nasi kerabu is blue? Does it because of the color additives? The truth is it is because of the blue flower, Kembang Telang (Clitoria ternatea) where people cook the rice using this flower. This flower can easily found because its a grow wild flower. Kembang Telang used as a blue color additive for nasi kerabu because it has bdark strong blue petals. This flower will produce blue clolor when it is cooked with rice even only 4-5 buds been put in. It is believed safe to use because it is an organic flower where its is rarely been sprayed with poison and get attacked by pest insect.

Nasi Kerabu??? Is it a food???

is popular with its traditional food includes Nasi Kerabu which is originated from Kelantan. Nasi Kerabu literally means "salad rice and famous among Kelantanese and Terengganuan.
However, it has spread all around other states and known as a unique delicious
meal. Take for example, believe it or not, in Tawau Sabah also there's nasi kerabu Kelantan there. This is because there's Kelantan community that stay there for work and nasi kerabu Kelantan being one of the favourite dish among community in Sabah. The original colour of nasi kerabu is blue color, and normally eaten with dried fish, crackers, grilled beef, grilled chicken, fried chicken, budu and ulam-ulaman.
